Hello Everybody, today without further ado I will share with you my Nanny’s recipe for her famous “Honey” (Mèzes) biscuits. These are the closest things I know that exist to a gingerbread men recipe but are much, much much nicer. These guys will soften within a few days and what you will experience is the taste of a cinnamon-y sponge biscuit crumble apart in your mouth… Scrumptious!!
Ingredients: (dkg = dags / 1dkg = 0.35oz)
25 dkg honey (slightly melted)
25 dkg sugar
12,5 dkg margarine
85 dkg flour
3 tsp bicarbonate of soda (this is very important!)
Cinnamon & Mixed spices & Ginger TO TASTE!
Mix all ingredients together, adding flour into the mixture bit by bit. Don’t be surprised when this dough will turn SUPER hard, as it is the nature of it due to the honey. It will be hard to knead but keep at it. Roll the dough out onto a floured surface (approx 1cm thick) and chose your favorite seasonal shapes for cutting. Place in the oven for about 15-20 minutes until golden, at 180 degrees and let cool before you decorate.
If you wrap these babies up in a cloth of two for a few days, the bicarbonate of soda will soften them to just the right amount. Here is what my dough looked like…
